



Introduction
“Oatma” fruit is also known as Artocarpus lacucha, a common fruit found in the Konkan region of India. It is a seasonal fruit with a unique flavor and numerous health benefits. In Goan tribal cuisine, “Oatma” fruit is traditionally used in various dishes like fish curry. The preservation of this fruit is also known as “Oatma sola” in local Konkani language. This sola are prepared during summer season between April and May. It takes about8-10 days from plucking the fruits till fully dried andstored in proper vessels. Previously,the tribal people of Goa used wooden vessels to keep this sola. This sola can be preserved for about 2-3 years, if stored properly.

Cut the “oatma” fruit in small slices with the help of “Aadoli” (It is a traditional cutting implement)

Spread the slices on a clean dry surface under the sun to dry

Ensure the drying area is free from dust and insects

When completely dry (after 4-5 days), remove all the seeds of the fruit, because gives a bitter taste and they spoil early

After this, take lukewarm water, add salt and stir till it dissolvescompletely

Apply this salt water on “oatma sola”, mix it properly and again spread the slices on a dry surface under the sun to dry further

Keep this to dryfor 2-3 days, and thus, “oatma sola” is ready to be storedfor off season
