Pansa Bakari (Jackfruit Cake)

Introduction
“PansaBhakari” is made of ripe jackfruit. It is a seasonal and unique dish which are made by tribal people of Goa. Most of these dishes are prepared during the month of April to June when jackfruit is harvested. The preparation of this dish isunique and traditional. This “Gharya Bhakari”looks like abeautiful cake. “Gharya Bhakari” is also called as “Dhonas”. Mostly, this dish is prepared during night time, because it requiresa long time to prepare.

For Cooking
  • 4-5 cups of strained juice of jackfruit
  • ½ Grated Coconut
  • ½ smallpieces of coconut
  • 10-15 Cardamom
  • 10-15 Cloves
  • ½ kg Goud
  • 2-3 cups of Rice flour
  • 2-3 cups of Big Semolina
  • Salt as per the Taste

    First, strain the jackfruit pieces in a strainer and keep them aside

    Then fry the semolina

    Keep the vessel containing the strained jackfruit paste on the mud chulha and stir thoroughly

    Let it cook for 3-4 minutes and then addjaggery, big semolina, rice flour, grated,and cut coconut, followed by cardamom, cloves, and salt as per the taste

    Stir continuously while adding the ingredients

    Gently spread the mixture with wet hands and cover it with banana leaves. Keep burning coals on top of the covered mixture

    Keep it aside for about 1-2 hours and then its ready to eat
