Pollyabhakri is the most popularbhakriamong the Goan communities. It is prepared inthe summer and winter seasons. This preparation is rare in the monsoons since wooden sticks are used during the roasting of the bhakris, which are not found in the monsoons.Pollyabhakriis served with any type of curry orkismur and with tea. Most of the tribal community people prepare Pollyabhakri at night time to be eaten at dinner.

Pollyabhakritakes around an hour of preparation. These bhakrisare made when people collect crabs from fresh water to make curry, raw jackfruit bhaji (chako), and any other kismur.

- INGREDIENTS FOR POLLYA BHAKRI:
- Ukdetandul(parboil rice)- 3 atiye (3 –kg)
- Ukde sheet (cooked rice)– 4 handful (500gram)
- Nall (Coconut) -1
- Kelli panna (Banana leaves)-6
- Shiri or shiryanchobharo (small firewood sticks of bundles) -4 bharye (4 bundles tiedwith rope)
- Mit(Salt) to taste
- INGREDIENTS FOR KISMUR:
- Harvi mirsang (Green chili)-15 fined chopped
- Kano (Onion) -1 fined chopped
- Nall (Coconut)- 1
- Haldi powder (Turmeric) -1 tsp.
- Ottamasolla (Tamarind)- 2
- Ujjyakbhajillebanged (smoked mackerels)- 5
- Water – ½ pot

PREPARATION FOR POLLYA BHAKRI:

Take ukdetandul, soak for at least 12 hours, and wash thoroughly

Grind parboil rice and add cooked rice and salt

The flour should be dry to prepare a good bhakri

Add grated coconut and mix well

Take 1 ½ of banana leaves and apply flour on them using your hands. This process is called “bhakrithapop”

Cover the flour with banana leaves. On the upper parts of the leaves,place a“shiri” (bunch of small sticks) and put it on fire

Cook for 15-20 minutes

The color of flour will change to brown as it gets cooked

When one side is cooked, turn the leaf and put another shiri on fire to cook this side

After cooking, remove the upper parts of bhakrii.e. coal, ash, and small sticks
