



Introduction
Hita bhakri is made of jackfruit leaves and is triangular. It is preparedonly forreligious occasions during Kalloand Naya Parab. This bhakri is mostly prepared at Shristhal village panchayat inCanacona.It is a very unique and traditionaldish that the tribal people are still preserving and preparing. ThisBhakriis servedwith Ros (juice of coconut and jaggery), kismur, or any curry like khatkhattem.

Traditionally tribalpeople look for new and nutritious foodstuffs in their surrounding nature.They chose jackfruit leaves because these leaves are robust. These communities are also aware of which leaves are better for them and know the nutritional values and the health benefits of plants and the leaves. Tribal women used suchamazing techniques,and skills and could invent new dishes with the resources they had at hand.

Ingredients
For Cooking
- Ukde tandul (unparaboil rice) – 3 Atiye
- Udid dal - 6 handful (1kg)
- Ponsa panna (Jackfruit leaves) - 20
- Hir (coconut stick) - 2
- Kopryo (it is a vessel used by tribal people especially for cooking bhakri)
- Kellichi panna (Banana leaves) - 2
- Mit (Salt) to taste
- Udok (Water) - 5 liter

First, soak the rice for at least 12 hours

Then wash it thoroughly and grind rice with a grinding stone till it becomes thick flour

Add salt in the flour and cover it and keep for 5-6 hours for fermentation

Take a jackfruit leaf, fold it into a triangle, and stitch it with hir so that it can contain the flour
