



Introduction
‘Kusada’ is a wild fruitfound in the hilly plateau areas of Goa. Between April to June, this wild fruit is available in the surrounding plateau area of the Tiswadi taluka. Kusada is full of medicinal values like controlling diabetes. Tribal people of Tiswadi taluka use this fruit to make a sweet dish also called ‘Kusada’. This dish is prepared using coconut and Jaggery. Usually, this wild fruit is bitter in taste,so the above ingredients help make the dish sweet and delicious. Furthermore, the fruit is also pre-boiledin water one day before and soaked in water to reduce the bitter taste of the fruit. This dish is usually servedin the evenings with tea.

- Small bowl “Kusada” fruit
- ½ bowl grated Coconut
- ½ Bowl grated jaggery
- 2 glass water
- 2 Pinches of salt

First gather the Kusadafrom the forest two days before the preparation

Remove the stalks of the fruits and wash them properly

Take the cooking vessel and keep it on a mud chulha

Add 2 glasses of water and put the kusada in a vessel

Add 2 pinches of salt in boiling water and keep this kusadafor 7-8 min to boil

After boiling, soak the fruits for one day in water
